Raw Mushroom Slider over beet & carrot salad served on onion flat bread


Onion Bread

Slice 1 large white onion as thin as possible, preferably with a mandolin
Combine 1/2 Cup of ground flax and 1/2 Cup of sunflower seeds in food processor
In a mixing bowl combine 1 chopped clove of garlic and 1/4 Cup Nama Shoyu
Add onion, flax and sunflower seeds and mix until a dough like consistency is achieved

Spread on Teflex dehydrator sheet
Sprinkle black sesame seeds and salt on top
Dehydrate at 115 degrees for 12 hours
Flip onto mesh dehydrator sheet and dehydrate for another 10-12 hours or until desired dryness is achieved

Beet & Carrot Slaw

Shred 1 beet and 2 carrots
Toss in a bowl with 1/4 cup rice vinegar 
Add fresh basil, salt & pepper

Mushroom Slider

Any mushrooms work but I prefer to use a combination of portobello, baby portobello, white and oyster mushrooms- roughly 2-3 cups of mushrooms sliced
1 chopped clove of garlic
1/2 Cup Nama Shoyu
Marinate mushrooms in garlic and Nama Shoyu while you prepare the remaining ingredients
1 chopped shallot
1/2 cup almond powdered
1/2 cup walnut powdered
1 each avocado
Celery seed, salt, pepper and thyme to taste
Combine all ingredients in a large mixing bowl 

With hands, form into balls approximately the size of a baseball and place on Teflex dehydrator sheet 9 to a sheet
Dehydrate at 145 for an hour to "sweat" out excess moisture
Turn down to 115 and dehydrate for 3 hours
Press balls down into burger shapes and dehydrate for an additional 3 hours
Flip onto mesh sheet and dehydrate for another 3-10 hours depending on how moist you'd like the sliders
Dehydrate for less time for "rare" sliders

Mustard 
Soak 1 cup brown mustard seeds and blend with 3/4 cup lemon juice & 1/2 tsp salt

Place 1 slice of onion bread on plate
Top assorted greens
1 Scoop of beet & carrot slaw
Slider
1 Slice of tomato
Raw mustard
Topped with sprouts

Sauteed Portobello Steaks with Jicama Potato Salad

So this would have been an entirely raw meal but yoga and work got in the way.  I planned on marinating marinating portobello caps in Nama Shoyu, Maple Syrup and Garlic, stuffing them with a cheesy pistachio pesto and dehydrating them for a few hours but instead I cooked the mushroom caps in olive oil, garlic, onions and tamari.  Cook the mushrooms with the desired amounts of the ingredients but be sure not to use too much tamari as it can become VERY salty.


Jicama Potato Salad
2 Small Jicama peeled and cubed
1 Avocado
1 Tbs Tahini
1 Tbs Nama Shoyu
1 Tbs Maple Syrup
1/2 Clove Garlic Chopped
1/4 Red Onion Slice thin
1 Pepper- preferably orange or yellow for color
2 Green Onions chopped
Basil, salt & pepper to taste

Mix all ingredients together until jicama is completely coverd
Chill for a minimum of 2 hours
Serve- Garnish with Parsley, Basil, Salt, Pepper and/or Avocado wedge

I served this with an arugula mache salad mix topped with diced tomatoes and a honey mustard dressing:

Raw honey, Dijon mustard, olive oil, and rice vinegar all to taste.

As a disclaimer- I don't measure and I don't encourage it!  It won't help you become a better cook all it will enable you to do is become better at following directions.

Shitake Mushroom Seviche, Sesame Kelp Noodles & Crab

When I ordered kelp noodles my husband was not shy to say that there was  no chance that he'd be sharing them with me.  Most people would just accept this, I of course saw it as a challenge.  And I'm proud to say that last night he actually ate and, more importantly, enjoyed kelp noodles.

Shitake Mushroom Seviche - my version of Matt Kenny's recipe

1 big bag of fresh shitake mushrooms sliced thin
1/2 red onion sliced thin
1 clove garlic

5 oranges juiced
3 limes juiced
1 habanero pepper seeded and sliced
Salt & Pepper to taste

Place all ingredients above in a bowl and set aside for 1-2 hours
Garnish with Avocado, Cilantro & a Lime Wheel

Sesame Kelp Noodles

1 bag of kelp noodles
1 bag baby spinach ripped into large chunks
2 hand full oyster mushrooms chopped
1/4 red onion sliced
1 clove garlic
2 tablespoons sesame oil
1 tablespoon peanut oil
2 tablespoons Nama Shoyu
1 tablespoon maple syrup or honey
4 plumb tomatoes seeded and chopped
salt & pepper

Crab

fresh crab meat with lemon juice
